Festive Cran-Brie Turkey Appetizers

6 sheets phyllo dough, defrosted
2 cups of cooked, chopped turkey
4 oz of Log Cabin Heaven cran orange walnut conserve or whole berry cranberry sauce
olive oil
8 oz double cream brie cheese, cut into 1/2-inch cubes
2 oz fine chopped walnuts (optional)

Working quickly, place one sheet of phyllo dough on work surface and lightly brush with olive oil. Top with next sheet, brush with olive oil, and once again with the third sheet of phyllo dough. Cover remaining phyllo with a damp tea towel to prevent dough from drying out. Cut the three layered and olive oil brushed dough into 2 inch squares. Place phyllo squares into mini-muffin pans. Place 1 teaspoon of cooked turkey into the bottom of the square, then top with a cube of brie cheese, followed by a dollop of cranberry and a sprinkle of walnuts (if using). Do the same with the next three sheets of phyllo dough and remaining ingredients. Bake at 375 for 12 minutes or until edges of phyllo are golden brown. Makes 24 mini appetizers. Cool 5 minutes before serving.
